- 2 1/2 cups protein powder
- 1 1/2 cups eggs whites
- 3 Tbsp almond flour
- 2 Tbsp ground flaxseed
- 3 Tbsp unsweetened almond milk
- 2 Tbsp water
- 1 mashed banana
- 1/4 cup organic (no sugar added) applesauce
- 2 Tbsp coconut oil (melted)
- 1 1/2 Tbsp cinnamon
- 3 tsp. baking powder
- Pinch of sea salt
- 1/2 cup blueberries
Preheat
oven to 350 degrees F. In a large bowl, mash banana with almond milk
until smooth. Add in the rest of the ingredients up to the blueberries
and mix well. Gently fold in your blueberries.
Spoon
mixture into a muffin tin sprayed with coconut oil and fill close to
the top. Bake for 15 to 20 minutes or until a toothpick inserted comes
out clean. Sprinkle powdered stevia on top and enjoy!
