Mozzarella, Tomato and Basil Salad

  • 6 large ripe tomatoes
  • 1 1/2 pound fresh mozzarella
  • 1/2 bunch of fresh basil
  • 1/2 cup olive oil
  • 2 Tbsp. balsamic vinegar
  • Salt and pepper, to taste

Slice 6 large ripe tomatoes and 1 1/2 1b. fresh mozzarella.  Thinly slice 1/2 bunch of fresh basil.  On a serving platter, alternate slices of tomatoes and mozzarella.  Sprinkle with basil.  Season lightly with salt and pepper.  Combine olive oil, balsamic vinegar along with a bit of salt and pepper to taste and serve on the side.  Enjoy!
